Thien Duong at Baan Dusit Thani welcomes Vietnam’s‘alchemist of spices’ for 5 days of exclusive feasts
Guest Chef Didier Corlou brings his love of spice and culinary innovation to the table from Monday 28 November – Friday 2 December
Vietnamese food lovers have a mouthwatering treat in store as renowned chef and restaurateur Didier Corlou is coming to Bangkok for an exclusive guest stint at Thien Duong restaurant at Baan Dusit Thani in the heart of the city.
French national Chef Corlou was among the first European chefs to work in Vietnam after the war and has lived there for more than 30 years. Today, he owns and operates the highly rated Madame Hien Restaurant in Hanoi. He has also made a splash in Europe alongside his brother through their joint business, Epices Corlou, which makes and sells Vietnamese spice blends, scented salts, and seasonings to chefs throughout the region. Dubbed the ‘alchemist of spices’ by the Bangkok Post, Chef Corlou has written four books about
Vietnamese cuisine, and he is well-known for his efforts to promote Vietnamese cuisine, preserve ancient recipes, and drive culinary innovation. Bringing his passion and culinary expertise to Bangkok, Chef Corlou will take control of Thien Duong’s kitchens to cook up a tempting selection of special three-course set lunches and five-course set dinners.
Each culinary journey promises to celebrate Vietnam’s natural herbs and spices and age-old culinary traditions through authentic recipes presented with modern flair. Red tuna with passion fruit, bok choy, and lemongrass; Caramelised pork with wild pepper and onion confit; ‘Foie gras’ pho soup with lemongrass; Duck in three ways with green tea sauce and ripe mango; and Vertical fresh prawn rolls, soft shell crab, avocado, and asparagus are just a few of the highlights.
“From my favourite, flavoursome Pho to the freshest ocean catch steamed with local fruit, the special menus reflect my deep love for Vietnamese cuisine and the unique flavours and recipes I have encountered during my time in the country,” says Chef Corlou. “I look forward to creating a culinary journey for all diners to enjoy – whether they are seasoned Vietnamese food lovers or experiencing this marvellous cuisine for the very first time.”
Lunch is priced at THB 750 ++ per person; dinner at THB 2,150 ++ per person. A wine pairing menu, specially curated for the occasion by Bangkok Beer & Beverages, can also be enjoyed for an additional THB 850 ++ (lunch) and THB 1,550 ++ (dinner).
A Michelin Bib Gourmand restaurant renowned for its creative design and exquisite attention to detail, Thien Duong is a modern interpretation of its previous iteration at the legendary Dusit Thani Bangkok hotel, which is currently undergoing redevelopment nearby. The restaurant is one of three former signature venues located at Baan Dusit Thani, a unique standalone restaurant concept set within a lovingly restored, historic stately home with lush gardens just off Silom road, a short walk from Sala Daeng BTS (Skytrain) and Silom MRT (underground) stations.
