Iron Chef Thailand - Chef TofuDusit Thani Pattaya is proud to announce a landmark culinary milestone. Executive Chef Tofu has been crowned the ‘Winning Challenger’ on the prestigious Iron Chef Thailand, following a high-stakes battle against British celebrity chef Martin Blunos. Starting 16 March 2026, guests can experience these championship dishes at The Bay Restaurant, the hotel’s premier seaside dining venue.

The Winning Menu: Mastery Over Every Ingredient

The a la carte selection features the exact dishes that secured the win, with prices starting from THB 299 net 

  • Oxtail Express (THB 399): A creative twist on the Italian Pappardelle al Ragù di Manzo. Chef Tofu infuses the rich meat sauce directly into the pasta for a perfect "single bite" experience.

  • Oxtail “BUCO” (THB 399): Inspired by the classic Ossobuco, this dish substitutes traditional veal with tender, slow-braised oxtail to create an elevated Italian masterpiece.

  • Pomegranate Shank Paella (THB 399): A unique meat-focused alternative to seafood paella. Remarkably, despite Chef Tofu’s personal aversion to the strong aroma of lamb, he has mastered the art of cooking it to perfection—achieving a tender texture and a delicate, aromatic scent

  • Lamb in Jar (THB 499): A rare Mediterranean classic featuring melt-in-the-mouth lamb shank slow-cooked in a ceramic jar and topped like a savory pie.

  • Quail Ballotine (THB 499): A French fine-dining highlight that transforms the modest quail into a luxury dish using sophisticated deboning and preparation techniques.

  • Sage of Waffle (THB 299): Reimagining the waffle as a savory high-end highlight paired with Carbonara and Steak. The inspiration for this dish came from a Japanese technique using fried meat; however, Chef Tofu adapted it into a grilled version—a signature move he first developed in Hua Hin after observing diners' preferences at lunch buffets.

Beyond the Kitchen: 13 Years of Experience

With 13 years in the industry and over seven years serving as an Executive Chef since the age of 30, Chef Tofu brings a wealth of leadership to Dusit Thani Pattaya. He views his role as a blend of culinary art and strategic management—overseeing everything from sourcing and marketing to team dynamics.

His hands-on "working in the trenches" style involves observing his team’s individual strengths and preferences to foster a collaborative environment. For Chef Tofu, managing a complex kitchen of diverse personalities is a craft as refined as the cooking itself.

The Bay Restaurant - Dusit PattayaA Destination for Foodies

While located within the iconic hotel, The Bay Restaurant has become a destination in its own right, drawing a significant number of non-hotel guests. Special Event: In addition to the daily menu, the restaurant will host an exclusive Chef’s Table on 27 March 2026. This immersive six-course wine-pairing dinner will offer a deep dive into Chef Tofu’s journey through the competition.
