Prepare your palate for an extraordinary journey as Sra Bua by Kiin Kiin, the acclaimed modern Thai dining destination at Siam Kempinski Hotel Bangkok, introduces its much-anticipated new menu: ‘Whispers of the Land.’ Conceptualized by the revered, Michelin-starred Chef Henrik Yde-Andersen and Resident Thai Head Chef Berm Chayawee Sutcharitchan, this culinary masterpiece dives deep into the rich flavors of Thailand's diverse landscapes, enhanced by contemporary techniques and Sra Bua’s signature world-class service.
'
Whispers of the Land' is more than just a menu; it's a testament to innovative Thai cooking fused with a strong commitment to sustainability. Each dish tells a story, crafted with locally and seasonally sourced ingredients, reflecting a profound connection to Thai communities and a sustainable ethos. Diners can expect a truly theatrical experience, enriched by the unique storytelling of Sra Bua by Kiin Kiin’s talented team.
A Culinary Narrative Unfolds
The experience begins in the lounge with the ‘In the Lounge’ act, a playful yet sophisticated introduction inspired by beloved Thai street bites. This opening act culminates as guests are invited into the kitchen, offering an exclusive, interactive glimpse into the "kitchen symphony"—witnessing the intricate preparation and sophisticated techniques behind each dish.
The heart of the new menu, the ‘In the Dining Room’ act, showcases new highlights that spotlight exotic local ingredients, broadening the perspective of Thai cuisine. Look forward to dishes like Kaeng Hed, a wild mushroom soup inspired by Chef Henrik’s memories of Thailand’s Isan region. Don't miss the Grilled Thai Beef Yum, a re-imagined charcoal-grilled tomato salad with spicy dressing, paying homage to the traditional Thai ‘Thao Taan’ grilling technique. The Sea Bass ‘Sam Ros’ offers a trio of bold flavors and textures, while the new curry course features Phuket Lobster Hor Mok, a complex blend of steamed shrimp, lobster, and chili paste served over a steamed egg.
A standout dish is Pa Lo, a refined version of the classic Thai-Chinese clear soup, infused with cinnamon and star anise. This exquisite creation features smoked duck from Khao Yai, rich foie gras, and the unique salak (snake fruit) from Chanthaburi province.
The culinary journey concludes with an artistic dessert course. Flower of Thailand offers a refreshing palate cleanser with the delicate beauty of local Thai jasmine, while White Lotus celebrates Sra Bua’s legacy, featuring locally grown vanilla from Chiang Mai and a Thai-style baked Alaska – a perfect, sweet finale to the ‘Whispers of the Land’ experience.
